Lunch today! - Lemon, basil and sun-dried tomato quinoa/veggie salad with chopped almonds.
-I used about a 1/3 of a cup of quinoa and simmered this in GF vegetable stock, then half way through added some chopped red bell pepper, zucchini, broccoli, spinach, baby corn and edamame.
-Once cooked through I added the juice and rind of half a lemon, several hefty shakes of dried basil, two chopped sun-dried tomatoes, a little bit of red onion, some smoked paprika, black pepper and nutritional yeast.
-And after that… I ate it. It was so delicious and flavourful. Quinoa has never let me down! Keep on doing your thing, quinoa.
Oh, and I had a kiwi for dessert. :D
